I got this recipe from my mom. I have no idea where she got it, but I remember her making it when I was a kid. I always remembered how delicious it was. It is a very simple recipe to make, is a complete meal by itself, and really is very tasty and filling.

Ingredients:

1 pound of ground beef

1/2 of a large onion, or 1 full medium onion, chopped

2 cloves of garlic, finely chopped

salt and pepper to taste

1 1pound can (about 2 cups) of French cut green beans (drained)

1 10 3/4 ounce can of condensed tomato soup

5 medium potatoes cooked*

1/2 cup of warm milk*

1 beaten egg*

1/2 to 1 cup of shredded cheese (I prefer cheddar for this, but you can use whatever you like)

* If you do not have regular potatoes, or just want to make this more easily, you can substitute a 4 serving package of instant mashed potatoes. If you use instant mashed potatoes, you do not need the egg. You can add some milk into the instant mashed potatoes, but it is not necessary.

Directions:

In a large skillet, cook meat, onion, and garlic until meat is lightly browned and onion is tender.* Add salt and pepper to taste. If you are using regular potatoes, mash them and add milk as necessary, but make sure they are stiff enough to hold shape. Add drained green beans and tomato soup to the meat. Do not add water to the soup. Pour into a greased 1 1/2 quart casserole dish. Ensure tomato soup is thoroughly mixed into the meat and green beans. Spread the mashed potatoes over the top of the mixture, ensuring the meat mixture is fully covered. Sprinkle cheese on top of potatoes. Bake in a 350-degree oven for 25-30 minutes.

*For a slightly healthier version, drain meat before adding the green beans and tomato soup.
