Quick and Easy Cheese Sauce

cheese sauceThis is my own recipe for a quick and easy cheese sauce that can be poured over vegetables, added to a sandwich, or served as a dip. It is simple to make and takes about 20 minutes or so.

Ingredients:

2 Tablespoons of butter

About 1/3 cup of flour

1 1/2 to 2 cups of shredded cheese (you can use whatever kind of cheese you like. I used a combination of Kraft Four Cheese Mexican Blend and La Chona Queso Quesadilla)

About 1/4 to 1/2 cup of milk

Directions:

1. In a small saucepan, heat butter over medium heat until melted.

2. Slowly add in the flour, a little at a time, whisking continuously to make a roux.

3. Once the flour and the butter have combined and start to appear clumpy and dry, add a splash of milk and continue whisking.

4. Start adding the cheese, about a handful at a time, and continue to stir.

5. As the cheese melts, and the sauce becomes thick and sticks to the whisk, slowly add more milk and continue to stir.

6. Lower the heat to about a medium simmer and allow the cheese to fully melt together. If your sauce becomes too thick, stir in more milk. Once the cheese has fully melted and all ingredients are incorporated into a smooth creamy sauce, lower the heat and keep the sauce warm.

7. Add salt and pepper to taste. For a different flavor, you can add in 1/4 tsp of onion powder and 1/4 tsp of garlic powder.

Notes:

I used a combination of two shredded cheeses I had in the refrigerator. You can use whatever kind of cheese you like. I am going to make this again using a combination of extra sharp cheddar and sharp cheddar. You can season the sauce with whatever seasonings you like. I added some onion powder and some garlic powder, and it was very good.
